[swift5][client] make AnyCodable optional

This PR makes the usage of AnyCodable.

If the users don't have any usage of Any in their API's, they can simply don't include the dependency AnyCodable, because it will not be needed.

This way it works for the users that need's this dependency and also for the users that don't need it.

This PR also fixes a small issue in the project.yml, when the only dependency is AnyCodable there was a missing tag dependencies:

You may regenerate an individual generator by passing the relevant config(s) as an argument to the script, for example ./bin/generate-samples.sh bin/configs/java*. For Windows users, please run the script in Git BASH.
  • File the PR against the correct branch: master, 5.1.x, 6.0.x
  • If your PR is targeting a particular programming language, @mention the technical committee members, so they are more likely to review the pull request.
